Harvested at the green mature stage (7.5 to 8.5 maturity), de-handed in sanitary packhouses, washed in alum baths to remove latex, fungicide-treated, air-dried, and vacuum-sealed in food-grade poly bags with ethylene absorbers inside heavy-duty cartons.
